Creamy Mushroom Chicken Delight
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8 oz (225 g) mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1 cup cream
- 1 teaspoon chopped fresh thyme
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
Creamy Mushroom Chicken Delight
Preparation:
1. Season the chicken breast as follows. Salt, pepper.
2. Heat the olive oil and butter in a large skillet over medium heat. Add the chicken breasts and fry until golden brown on both sides, about 5 to 7 minutes per side. Remove chicken from pan and set aside.
3. In the same pot, add the mushrooms, onions, and garlic. Sauté until the mushrooms are golden brown and the onions are translucent.
4. Pour in the chicken broth and deglaze the pan, scraping up any brown bits from the bottom. Bring to a simmer and reduce by half.
5. Reduce heat and stir in cream and thyme. Return the chicken to the pot and simmer until the sauce thickens and the chicken is cooked through, about 10 minutes.
6. Garnish with fresh parsley before serving.
