Creamy Sun-Dried Tomato Chicken Pasta

Ingredients:

– 2 boneless, skinless chicken breast fillets, cut into bite-sized pieces
– Season with salt and pepper
– 1 tablespoon olive oil
– 2 garlic cloves, minced
– 1 cup cream
– Chicken 1/2 cup broth
– 1/2 cup sun-dried tomatoes (chopped)
– 1 tsp Italian seasoning
– 1/2 tsp red pepper flakes (optional)
– 8 oz penne pasta
– 1/2 cup grated Parmesan cheese
– 2 tablespoons fresh basil, chopped

Directions:

1. Season chicken with salt and pepper.
2. Heat the olive oil in a large skillet over medium heat. Add chicken and fry until golden brown. Remove chicken and set aside.
3. Add garlic to the same skillet and sauté for 1 minute. Add the heavy cream, chicken stock, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Bring to a boil.
4. Meanwhile, cook pasta according to package directions. drain.
5. Return chicken and sauce to pot and simmer for 5 minutes. Stir together the cooked pasta and Parmesan cheese until the cheese is melted.
6. Garnish with fresh basil before serving.
