Delicious Vegetable Casserole
Ingredients
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups sliced carrots
- 1 cup frozen peas
- 1 cup sliced mushrooms
- 1 can (10.5 ounces) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup shredded Cheddar cheese
- 1/4 cup shredded Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper Serves
- 1 cup crushed R-Its crackers
- 2 tablespoons melted butter
Delicious Vegetable Casserole
Directions
Preheat oven to 175°C (350°F). Grease a 9×13-inch baking dish.
Bring a large pot of water to a boil. Add the broccoli, cauliflower, and carrots. Cook for 5 minutes, drain and set aside.
In a large bowl, combine the evaporated cream of mushroom soup, sour cream, grated Cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well.
Add the cooked vegetables, frozen peas, and sliced mushrooms to the bowl. Stir until all the vegetables are well coated with sauce.
Pour the vegetable mixture into the prepared baking dish, distributing evenly.
In a small bowl, mix crushed Ritz crackers and melted butter. Sprinkle cracker mixture evenly over the casserole.
Bake for 25-30 minutes or until top is golden brown and casserole is bubbly.
Allow casserole to cool for a few minutes before serving.
