Delightful Cream Cake with Berries
Ingredients:
- 4 eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 mixed berries cup (strawberries, raspberries, blueberries, etc.)
- Fresh mint leaves for garnish
Delightful Cream Cake with Berries
Preparation:
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a mixing bowl, mix the eggs and granulated sugar until light and fluffy.
Sift the flour and baking powder and carefully fold into the egg mixture until everything is well mixed.
Pour the batter into the prepared cake pan and smooth the surface.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
In a separate bowl, whisk the cream until stiff peaks form. Carefully add sour cream, powdered sugar and vanilla extract.
Once the cake has cooled, cut it horizontally into two layers.
Spread half of the whipped cream mixture on the bottom cake layer, then spread half of the mixed berries on top.
Top with second cake layer and spread remaining whipped cream mixture on top. Garnish with remaining berries and mint leaves.
Refrigerate for at least 1 hour before serving.
