Frito Chicken Casserole

Ingredients:

2 cups cooked chicken,

shredded or cubed 1 can (10.5 oz)
condensed cream of chicken soup

1 can (15 oz)corn, drained

1 can green chili peppers, diced 4 ounces), drained
1/2 teaspoon chili powder
Salt and pepper to taste
2 cups shredded cheddar cheese
2 cups crushed Fritos corn chips
Fresh cilantro for garnish (optional)

Directions:

Place in the oven. Preheat to 350°F (175°C). . . Coat a 9-by-13-inch baking dish with cooking spray or butter.
In a large mixing bowl, combine cooked chicken, cream of chicken soup, drained corn, diced green chiles, chili powder, salt, and pepper. Stir until everything is well mixed.
Spread half of the chopped Fritos evenly in the bottom of the prepared baking dish.
Pour chicken mixture over Fritos layer and spread evenly.
Sprinkle half of the grated cheddar cheese over the chicken mixture.
Layer the remaining chopped Fritos on top of the cheese.
Sprinkle remaining shredded cheddar cheese over Fritos layer.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 to 30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
Remove the foil from the baking dish and continue baking for an additional 5 to 10 minutes, or until the cheese is golden and crisp.
When ready, remove Fritto Chicken Casserole from the oven and let cool for a few minutes.
Garnish with chopped fresh coriander, if desired, before serving.
Serve warm and cheesy frites chicken casserole straight from the baking dish and enjoy its comforting flavor.
