Instructions
1. Prepare the Chicken Bites:
- Season the chicken pieces with paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown, about 4-5 minutes per side.
- Add butter and minced garlic, stirring to coat the chicken in the garlic butter. Cook for another 1-2 minutes, ensuring the chicken is cooked through. Remove from the skillet and set aside.
2. Cook the Pasta:
- While the chicken is cooking, prepare the pasta according to package instructions. Drain and set aside, reserving ½ cup of pasta water.
3. Make the Creamy Parmesan Sauce:
- In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, Italian seasoning, salt, and pepper.
- Once the sauce is smooth and creamy, add the spinach. Cook for 2-3 minutes, or until the spinach wilts.
4. Combine:
- Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, stir in a little reserved pasta water.
- Add the garlic butter chicken bites back to the skillet, mixing gently to combine.
5. Serve:
- Plate the pasta and chicken, and garnish with additional Parmesan cheese or red pepper flakes if desired.
