Garlic Butter Shrimp Scampi Lasagna
Directions:
Preheat oven:
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Prepare shrimp:
Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, 1 to 2 minutes. Add the shrimp and cook for 2 to 3 minutes or until pink and cooked through. Remove shrimp from pot and set aside.
Make the garlic butter sauce:
Melt butter in the same pot. Stir in white wine, lemon juice, and red pepper flakes. Cook for 3 to 4 minutes to allow flavors to combine. Add cream and cook for an additional 2 to 3 minutes until sauce is slightly thickened. Season with salt and pepper.
Prepare the ricotta mixture:
In a large bowl, combine the ricotta, half the mozzarella, and half the Parmesan. Season with salt and pepper.
Assemble the lasagna:
Spread a thin layer of the garlic buttercream sauce into the bottom of the prepared baking dish. Place 3 lasagna sheets on top, then layer with the ricotta mixture, shrimp, and other sauce on top. Repeat layers, finishing with a final layer of pasta and the remaining mozzarella and Parmesan cheeses.
Bake:
Cover the lasagna with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
Serve:
Garment with fresh parsley and serve warm.
