Instructions:

Cook the Pasta:

    • Cook the pasta according to package instructions in salted water until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.
  1. Prepare the Shrimp:
    • Season the shrimp with salt and pepper.
    • In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for 1-2 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Make the Garlic Butter Sauce:
    • In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for 1-2 minutes until fragrant.
    • Pour in the white wine (or chicken broth) and scrape up any browned bits from the bottom of the pan. Let the wine cook down for 2-3 minutes until slightly reduced.
    • Stir in the heavy cream, remaining butter, and lemon zest. Bring to a simmer, stirring occasionally, and let the sauce thicken for 2-3 minutes. Season with salt and pepper to taste.
  3. Combine the Pasta and Shrimp:
    • Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add a bit of the reserved pasta water to thin it out to your desired consistency.
    • Add the cooked shrimp back into the skillet and toss everything together to combine.
  4. Finish and Serve:
    • Squeeze the lemon juice over the pasta and shrimp, and toss again.
    • Garnish with fresh parsley and grated Parmesan cheese, if desired.

Tips:

  • For extra flavor, add a splash of white wine or a sprinkle of fresh herbs like basil or thyme.
  • You can substitute the shrimp for chicken or scallops if preferred.
  • For a lighter version, use half-and-half or milk instead of heavy cream.
