Green Bean, Potato, and Bacon Bake
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Prepare the Potatoes
- Toss the quartered potatoes in a bowl with olive oil, garlic powder, smoked paprika (if using), salt, and pepper. Spread them out on a large baking sheet or baking dish.
- Roast the Potatoes
- Roast the potatoes for 20–25 minutes or until they start to become tender.
- Blanch the Green Beans (If Using Fresh)
- While the potatoes are roasting, bring a pot of salted water to a boil. Add the green beans and cook for 2–3 minutes, then immediately transfer them to an ice bath to stop the cooking. Drain and set aside. (Skip this step if using canned green beans.)
- Combine Ingredients
- Remove the baking dish from the oven. Add the green beans to the potatoes and drizzle with melted butter. Stir gently to combine.
- Add the Bacon
- Scatter the cooked bacon pieces evenly over the top.
- Bake Together
- Return the dish to the oven and bake for another 10–15 minutes, until the potatoes are golden and the green beans are tender.
- Garnish and Serve
- Sprinkle chopped fresh parsley on top for garnish. Serve hot as a side dish or a main course.
Tips
- For extra flavor, sprinkle some grated Parmesan cheese over the top before the final bake.
- This dish pairs well with roasted chicken, steak, or even as part of a holiday spread.
