Grilled Shrimp and Grits
Ingredients
For the grits:
– 4 cups water
– 1 cup ground grits
– 1 cup cream
– 2 tablespoons unsalted butter
– 1 cup grated sharp cheddar cheese
– Salt and pepper to taste
For Grilled Shrimp :
– 1 pound peeled and deveined large shrimp
– 2 tablespoons olive oil
– 1 tablespoon Cajun seasoning
– 2 garlic cloves, minced
– Juice of 1 lemon
– Salt, to taste )
– Chopped green onions for garnish
Grilled Shrimp and Grits
Directions:
Make the grits:
– Bring a medium pot of water to a boil. Gradually add the groats, stir and reduce the heat to low. Cover and simmer, stirring occasionally, until the grains thicken, about 20 to 25 minutes.
– Once the grits are thick and creamy, stir in the cream and butter until well combined. Add grated cheddar cheese and stir until cheese is melted. Season with salt and pepper. Keep shrimp warm while baking.
Prepare the shrimp:
– Preheat grill to medium-high heat.
– In a bowl, toss the shrimp with the olive oil, Cajun seasoning, minced garlic, and lemon juice until well combined. Marinate the shrimp for about 10 minutes.
– Skewer shrimp if desired.
– Grill the shrimp for about 2-3 minutes on each side or until pink and slightly charred.
– Season with salt after grilling.
Assemble the bowls:
– Divide the creamy groats among the bowls.
– Top with grilled shrimp.
– Garnish with chopped green onions.
– Serve warm, garnished with additional lemon wedges if desired.
