heart of comfort with our Hobo Casserole
Ingredients:
1 pound lean ground beef
Salt and pepper to taste
1 small yellow onion, chopped
4 medium russet potatoes, peeled and sliced
8 ounces cheddar cheese, grated
Cream of Chicken Soup 1 can (10 oz)
1 (10 oz can Cream of Potato Soup
1 tsp Worcestershire sauce
1/4 cup milk
1 tsp Creole seasoning
1/3 cup crispy fried onions

Directions:
Start the oven. Preheat to 350°F (177°C).
Place the ground beef in a 10-inch cast iron skillet or small baking dish and press to coat.
Season the chopped onions with the beef. Scatter on top.
Place potato slices on top.
Sprinkle grated cheese evenly over the potatoes.
In a medium mixing bowl, combine chicken broth, potato soup, Worcestershire sauce, milk, and Creole seasoning. Whisk well.
Pour the soup mixture over the cheese layer and distribute it evenly.
Cover with aluminum foil and bake in the preheated oven for 1.5 hours.
Remove from the oven, remove the foil and sprinkle the fried onions on top. Place under the broiler for a few minutes to brown.
