Ingredients

For the Fruit Mixture:
  • 2 cups (300g) mixed dried fruits (raisins, cranberries, chopped apricots, or cherries)
  • 1/2 cup (120ml) orange juice (or rum for a boozy version)
For the Cake Batter:
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup (120ml) milk
  • 1 cup (120g) chopped nuts (walnuts, pecans, or almonds)
Optional Glaze:
  • 1/4 cup (60ml) orange juice or rum
  • 2 tbsp sugar
