Heavenly Raspberry Cheesecake Bars
Ingredients:
For the crust:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, cooled and diced
- 1/4 teaspoon salt
For the raspberry layer:
- 2 cups fresh raspberries
- 1/4 cup white sugar
- 1 tablespoon cornstarch
For the cheesecake layer:
- 2 (8 oz) packages of cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
For garnish:
- 1/4 cup chopped almonds, toasted
- Fresh mint leaves
Heavenly Raspberry Cheesecake Bars
Preparation:
Preheat oven to 175°C (350°F) and line an 8-inch square baking dish with parchment paper. Masu. For the
crust, combine flour, oats, brown sugar, and salt in a bowl. Cut in butter until crumbly. Press the mixture into the prepared mold.
Bake for 15 minutes or until lightly golden brown.
For the raspberry layer, combine raspberries, sugar, and cornstarch in a saucepan over medium heat. Boil until thickened and spread on top of the baked dough.
For the cheesecake base, mix cream cheese and sugar until smooth. Add eggs and vanilla and mix until well combined. Pour over the raspberry layer.
Bake for 25-30 minutes until set. Cool to room temperature and refrigerate for at least 2 hours.
Before serving, sprinkle with roasted almonds and garnish with mint.
