Jalapeno Popper Casserole
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prep Chicken: Shred the cooked chicken and set aside. You can use rotisserie chicken for convenience.
- Make the Creamy Mixture: In a mixing bowl, combine softened cream cheese, sour cream, cheddar, mozzarella, and Monterey Jack cheese. Stir in the chopped jalapeños, crumbled bacon, salt, and pepper. Mix well until smooth and creamy.
- Assemble Casserole: Spread the shredded chicken in the bottom of a 9×13 inch baking dish. Pour the creamy cheese mixture over the chicken and spread it evenly.
- Prepare Topping: In a small bowl, mix crushed crackers (or panko breadcrumbs) with melted butter. Sprinkle this mixture over the top of the casserole.
- Bake: Place the casserole in the oven and bake for 20-25 minutes, or until the topping is golden and the cheese is bubbly.
- Serve: Let it cool for a few minutes, then serve warm.
