Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prep Chicken: Shred the cooked chicken and set aside. You can use rotisserie chicken for convenience.
  3. Make the Creamy Mixture: In a mixing bowl, combine softened cream cheese, sour cream, cheddar, mozzarella, and Monterey Jack cheese. Stir in the chopped jalapeños, crumbled bacon, salt, and pepper. Mix well until smooth and creamy.
  4. Assemble Casserole: Spread the shredded chicken in the bottom of a 9×13 inch baking dish. Pour the creamy cheese mixture over the chicken and spread it evenly.
  5. Prepare Topping: In a small bowl, mix crushed crackers (or panko breadcrumbs) with melted butter. Sprinkle this mixture over the top of the casserole.
  6. Bake: Place the casserole in the oven and bake for 20-25 minutes, or until the topping is golden and the cheese is bubbly.
  7. Serve: Let it cool for a few minutes, then serve warm.
