Jumbo Shrimp Scampi
Ingredients:
– 1 pound jumbo shrimp, peeled and deveined
– 3 tablespoons olive oil
– 4 cloves garlic, minced
– 1/4 cup white wine
– Juice of 1 lemon
– 1/4 cup fresh parsley, chopped
– 1/2 teaspoon red pepper flakes
– Salt and pepper to taste
– 4 tablespoons unsalted butter
– 1/2 pound spaghetti
Jumbo Shrimp Scampi
Directions:
1. In a large pot of salted boiling water, cook spaghetti according to package instructions until al dente.
2. Meanwhile, in a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
3. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until pink and fully cooked. Remove shrimp from skillet and set aside.
4. In the same skillet, add white wine, lemon juice, and red pepper flakes. Bring to a simmer and let reduce by half, about 2 minutes.
5. Stir in butter until melted and smooth.
6. Return the shrimp to the skillet along with the cooked spaghetti. Toss well to coat the pasta and shrimp in the garlic butter sauce.
7. Season with salt and pepper, garnish with chopped parsley, and serve immediately.
