Lemon Cheesecake Crescent Rolls
Ingredients:
1 block package (8 oz) of cream cheese, softened at room temperature
1/4 cup granulated sugar
4 teaspoons grated rind of 1 large lemon
1 can refrigerated crescent rolls or crescent roll dough sheets (8 oz.)
1 tablespoon melted butter
For the lemon glaze – Topping:
1/2 cup powdered sugar
2 to 3 teaspoons fresh lemon juice
Freshly grated lemon zest for garnish (optional)
Lemon Cheesecake Crescent Rolls
Preparation:
Preheat and Prep: Preheat oven to 375 degrees. °F (190°C) and large Line a baking tray with baking paper to prevent sticking.
Prepare cheesecake filling. In a medium bowl, combine softened cream cheese, granulated sugar, and grated lemon zest. Mix with an electric mixer until smooth and creamy.
Assemble the croissants: Open the croissant package and divide the dough into 8 triangles. Place it on a flat surface. Place about 2 tablespoons of the cream cheese and lemon mixture on the widest end of the half-moon triangle, dividing it evenly between the rolls.
Roll and seal: Roll up the crescent from the wide end and tuck the pointy end underneath. Press the seams together to seal the filling inside. Repeat with remaining croissants.
Butter: Place the filled croissants evenly on the prepared baking tray. Brush the surface with melted butter to get a nice brown color.
Bake to Perfection: Bake on the middle rack of the preheated oven for 11 to 14 minutes, or until the croissants are golden brown and crispy.
Prepare the lemon glaze: While the crescents are cooling, prepare the lemon glaze. In a small bowl, mix together the powdered sugar and lemon juice until smooth. Add more lemon juice to adjust consistency if necessary.
Glaze and Garnish: Pour lemon glaze over warm croissants. To further enhance the flavor, if desired, you can garnish the dish with grated lemon zest.
