Instructions:

  1. Cook the Fries:
    • Prepare the French fries according to package instructions or make homemade fries. Aim for crispy fries to hold the toppings well.

    For homemade fries:

    • Peel (optional) and cut 2 large potatoes into 1/4-inch sticks.
    • Toss with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper.
    • Spread on a baking sheet and bake at 425°F (220°C) for 25–30 minutes, flipping halfway, until golden and crispy.
  2. Prepare the Toppings:
    • While the fries are cooking, fry the bacon until crispy, drain on a paper towel, and crumble into small pieces.
    • Shred the cheese and slice the green onions.
  3. Assemble the Loaded Fries:
    • Place cooked fries on a large oven-safe plate or tray.
    • Sprinkle generously with cheese and bacon.
    • Return to the oven for 5–7 minutes at 400°F (200°C), or until the cheese is melted and bubbly.
  4. Finish and Serve:
    • Drizzle sour cream or ranch dressing over the top.
    • Sprinkle with green onions, paprika, and additional salt and pepper if needed.
    • Serve immediately and enjoy while warm!

Optional Add-Ons:

  • Jalapeños: Add sliced jalapeños for a spicy kick.
  • Chili: Top the fries with a layer of chili before the cheese for a chili cheese fries twist.
  • Guacamole or Salsa: Add dollops of guacamole or fresh salsa for a Tex-Mex vibe.
