Ingredients:

1 pound ground beef
4 garlic cloves, minced
1/2 red onion, coarsely chopped
10 small bella mushrooms, coarsely chopped
2 tablespoons fresh thyme
1 tablespoon fresh oregano
tablespoon onion powder 1
1/4 teaspoon nutmeg
4 1/2 cups beef broth  cups spinach
1/2 cup cream
1 cup sharp cheddar cheese
2 cups fontina cheese or mozzarella, added to garnish
Red pepper, to taste
Salt and pepper, to taste
Parsley, for garnish

Instructions:

Preheat the oven to 200°C. Cut the butternut squash in half, drizzle with olive oil, and add salt and pepper. Bake in the oven for 45 minutes.
Place the ground beef in a deep pot and simmer until the fat releases. Add the minced garlic, red onion, mushrooms, salt, and pepper. Cook until onions are soft. Add fresh thyme, oregano, onion powder, nutmeg, and a pinch of red pepper. Mix everything and add beef broth and spinach. Boil the spinach. Boil excess liquid for about 5 minutes.
Add cream and cheese. Stir together and remove from heat.
Remove the butternut squash from the oven. Remove a few tablespoons of butternut squash and add the beef and cheese filling. Top with additional fontina or mozzarella cheese and roast in the oven for 3 to 5 minutes. garnish with parsley
