Lamb Chops over Lobster Mash with Asparagus
Ingredients:
- 4 lamb chops
- 1 pound (450 g) potatoes, peeled and diced
- 1 cup lobster meat, cooked and chopped
- 1 bunch asparagus, peeled
- 1/4 cup cream
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: 1/2 cup cooked shrimp or crab meat
Lamb Chops over Lobster Mash with Asparagus
Preparation:
1. First , boil the potatoes in a large pot of salted water until tender (about 15°C). -20 min. Drain and return to the pot.
2. Mash the potatoes with the cream, butter, salt, and pepper until a smooth mass forms. Gently fold in the lobster meat (and shrimp or crab, if using).
3. Preheat a grill or skillet over medium-high heat. Season the lamb chops with salt and pepper. Fry for 3 to 4 minutes on each side until desired doneness. Let rest for 5 minutes.
4. Heat the olive oil in a frying pan over medium heat. Add asparagus and season with salt and pepper. Cook, stirring occasionally, until tender and crispy, about 4 to 5 minutes.
5. Place the lamb chops on top of the lobster mash and serve with the asparagus.
