Mango Cake
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (softened)
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 cup mango puree (from ripe mangoes)
1/2 cup Greek yogurt or sour cream
Optional: Mango slices for garnish
Mango Cake
Directions:
Preheat oven to 350°F (175°C). Grease a cake pan with oil and flour.
In a medium bowl, combine flour, baking powder, baking soda, and salt.
In another large bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs one at a time and mix, then add the vanilla extract and mix.
Gradually fold in the flour mixture, alternating with the mango puree and Greek yogurt (or sour cream), starting and ending with the flour mixture. Mix until well combined. Do not over mix.
Pour the batter into the prepared cake pan and smooth it out with a spatula.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Once cooled, garnish with mango slices if desired.
