  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 4 large egg whites
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • ¾ cup (180ml) maraschino cherry juice (reserved from the jar)
  • ½ cup (120ml) whole milk
  • ¾ cup (100g) chopped maraschino cherries

For the Frosting:

  • 1 cup (230g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 2-3 tbsp maraschino cherry juice
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • A pinch of salt

Optional Garnish:

  • Whole maraschino cherries
  • Sprinkles or shaved white chocolate
