Mexican Taco Lasagna
Ingredients:
– 1 pound ground beef
– 1 package taco seasoning
– 1 can (15 oz) black beans, drained and rinsed
– 1 can (15 oz) corn, drained
– 1 salsa jar (16 oz)
– 1 cup sour cream
– 12 uncooked lasagna noodles
– 3 cups grated Mexican cheese blend
– 1/4 cup fresh cilantro, chopped
– 1 avocado, sliced
– 1 tomato, diced
– Salt and pepper to taste Flavor
Mexican Taco Lasagna
Directions:
1. Preheat oven to 375°F (190°C).
2. Place the ground meat in a large frying pan and fry over medium heat until no longer pink. Drain and return to the pot.
3. Add taco seasoning, black beans, corn, and salsa and mix. Simmer for 5 minutes. Season with salt and pepper.
4. Spread a thin layer of beef mixture in the bottom of a 9-by-13-inch baking dish. Place 4 lasagna noodles on top of beef mixture.
5. Spread 1/3 of the sour cream over the noodles, followed by 1/3 of the beef mixture and 1 cup of the cheese. Repeat the layer twice.
6. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for another 10 minutes or until cheese is bubbly and browned.
7. Let rest for 10 minutes before cutting. Garnish with fresh cilantro, avocado slices, and diced tomatoes.
