Ingredients:

  • 2 lbs baby red or Yukon Gold potatoes, cut into 1-inch pieces
  • 4 tbsp unsalted butter, melted
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish or casserole dish.
  2. Prepare the Potato Mixture:
    • In a large mixing bowl, combine the melted butter, sour cream, garlic powder, salt, and pepper. Stir in the chopped potatoes and toss until evenly coated.
  3. Bake the Potatoes:
    • Transfer the coated potatoes to the prepared baking dish, spreading them out in an even layer.
    • Cover the dish with foil and bake for 30-35 minutes, or until the potatoes are tender.
  4. Add Toppings and Finish Baking:

    • Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
