Ingredients

4 pounds pork shoulder or loin
1 cup orange juice
1/2 cup lime juice
1/4 cup lemon juice
6 garlic cloves, minced
2 teaspoons dried oregano
2 teaspoons ground cumin
Salt 1 teaspoon
black pepper 1/2 teaspoon
1/4 cup olive oil

Directions:

In a bowl, combine orange juice, lime juice, lemon juice, minced garlic, dried oregano, ground cumin, salt, black pepper, and olive oil. Mix. Stir everything until everything is well mixed.
Place the pork shoulder or loin in a large zip-top bag or glass dish. Pour the mojo marinade over the pork, making sure to cover it completely. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for maximum flavor.
Preheat oven to 325°F (165°C).
Remove pork from marinade and place in roasting pan or casserole dish. Reserve the marinade for dipping.
Roast the pork in the preheated oven for about 3 to 4 hours, or to an internal temperature of 145°F (63°C) for medium doneness or 160°F (71°C) for well done. Roast until reaching .
Marinate the pork with the reserved marinade every hour to keep it moist and flavorful.
Once cooked, remove the pork from the oven and let it rest for 15-20 minutes before slicing.
