Mom’s Famous Cream Puffs

Ingredients:

 For the choux pastry:

– 1 cup water
– 1/2 cup butter
– 1 cup all-purpose flour
– 4 large eggs

 For the custard filling:

– 2 cups milk
– 1 sugar /4 cup
– 2 egg yolks
– 1 whole egg
– 1/4 cup cornstarch
– 1 teaspoon vanilla extract
– Pinch of salt

Mom's Famous Cream Puffs

Preparation:

1. Prepare oven and skillet: Turn oven to 425 Preheat. °F (220 °C). Line a baking tray with baking paper.
2. Prepare the choux pastry. Bring water and butter to a boil in a medium saucepan. Add the flour and stir vigorously until the mixture forms a ball. Remove from heat and let cool slightly. Add eggs one at a time, beating well after each addition until the batter is smooth.
3. Baking: Place tablespoonfuls on prepared baking tray. Bake for 20-25 minutes or until golden brown. Cool on a wire rack.
4. Make the vanilla pudding filling. Put milk and sugar in a pot and heat until it boils. In a separate bowl, mix together the egg yolks, whole eggs, cornstarch, and salt. Add warm milk little by little and mix. Return the mixture to the pot and cook over medium heat, stirring constantly, until thickened. Remove from heat; add vanilla extract.
5. Fill with cream puffs. After cooling, cut off the top of the cream puff and fill with vanilla sauce. Replace the lid and sprinkle with powdered sugar if desired.
