Oreo Strawberry Cheesecake Bars
Ingredients:
For the Crust:
24 Oreo cookies
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
For the Strawberry Topping:
1 cup fresh strawberries, diced
2 tablespoons granulated sugar
1 tablespoon cornstarch
1 tablespoon water
Oreo Strawberry Cheesecake Bars
Directions:
Preheat oven to 350°F (175°C). Line a 20x20cm baking tin with baking paper, leaving an overhang for easier removal.
For the dough, place the Oreo cookies in a food processor and pulse until finely chopped. Add the melted butter and pulse again until well combined. Press the mixture evenly into the base of the prepared pan.
Mix cream cheese and sugar in a mixing bowl until smooth and creamy. Add eggs one at a time, mixing well after each egg. Stir in vanilla extract and sour cream until well combined.
Pour cheesecake filling over Oreo base and distribute evenly.
Bake in the preheated oven for 25-30 minutes or until the edges are set and the center is slightly jiggling.
While the cheesecake is baking, prepare the strawberry topping. In a small saucepan, combine the diced strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until mixture thickens and strawberries are tender, about 5 minutes. Remove from heat and let cool slightly.
Once the cheesecake is baked, let it cool in the mold for about 15 minutes, then spread the strawberry topping on top.
Chill the cheesecake bars in the refrigerator for at least 4 hours or until completely set.
Once cool, use the leftover parchment paper to lift the cheesecake out of the pan. Cut into bars and enjoy.
