Fluffy Pancakes with Chocolate Filling

Ingredients:

– 2 cups all-purpose flour
– 2 tablespoons sugar
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1 3/4 cup milk
– 1/4 cup unsalted butter, melted
– 2 tbsp. eggs
– 1 teaspoon vanilla extract
– 1/2 cup chocolate chips or chopped chocolate
– butter or oil for cooking

Directions:

1. In a large bowl, whisk together the flour, sugar, baking powder, and salt. .
2. In a separate bowl, mix together the milk, melted butter, eggs, and vanilla extract until smooth.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
4. Add chocolate chips or chopped chocolate.
5. Heat a large skillet or griddle over medium heat and lightly coat with butter or oil.
6. Pour 1/4 cup of batter into the pan for each pancake. Cook until bubbles appear on the surface, then flip and cook on the other side until golden brown.
7. Serve warm with your favorite toppings.
