Peach Pretzel Jello Salad

Ingredients:

For the pretzel crust:
  •  2 cups crushed pretzels
  •  3/4 cup melted unsalted butter
  •  3 tablespoons granulated sugar
For the peach layer:
  •  1 package peach flavored gelatin ( 6 oz)
  •  2 cups boiling water
  •  2 cups cold water
  •  2 cups diced fresh peaches
For the cream cheese layer:
  •  8 oz cream cheese, softened
  •  1 cup granulated sugar
  • 1 ( 8 oz) container frozen whipped cream, thawed

Directions:

  •  Preheat oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
  • In a mixing bowl, combine the crushed pretzels, melted butter, and granulated sugar for the pretzel shell.
  •  Press the mixture into the bottom of the prepared baking dish.
  • Bake the base in the preheated oven for 10 minutes. Remove from the oven and let cool completely.
  •  Dissolve peach-flavored gelatin in a large mixing bowl over boiling water.
  •  Stir in cold water and diced peaches.
  •  Pour peach mixture over cooled pretzel dough.
  •  Refrigerate for at least 1 hour or until firm.
  •  In a separate mixing bowl, mix softened cream cheese and granulated sugar until smooth.
  • Add the whipped topping until everything is well mixed.
  •  Spread the cream cheese mixture over the set peach layer.
  • Refrigerate for an additional 2 hours or until completely set.
  •  Once set, cut into squares and serve chilled.
