Peanut Butter Balls
Instructions
1. Make the Peanut Butter Mixture
- In a large bowl, combine peanut butter, softened butter, and vanilla extract. Mix until smooth and creamy.
- Gradually add powdered sugar, stirring until a thick, dough-like consistency forms.
2. Form the Balls
- Scoop small amounts of the mixture (about 1 tablespoon) and roll into balls.
- Place the balls on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes or until firm.
3. Melt the Chocolate
- In a microwave-safe bowl, combine chocolate chips and coconut oil (if using). Microwave in 20-30 second intervals, stirring after each, until smooth and fully melted.
4. Dip the Peanut Butter Balls
- Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let excess chocolate drip off.
- Return the coated balls to the parchment-lined sheet.
5. Chill and Serve
- Refrigerate the coated balls for about 1 hour, or until the chocolate is set.
- Store in an airtight container in the refrigerator for up to 2 weeks.
