Pepper Steak Stir-Fry
Ingredients:
2 tablespoons olive oil, divided
1 red bell pepper, cut into 1-inch cubes or strips
1 bell pepper, cut into 1-inch cubes or strips
8 oz. flank steak sliced in strips
3 minced garlic
1/4 cup brown sugar (packaged)
1/2 cup low-sodium soy sauce
2 teaspoons sesame oil
1 teaspoon grated ginger
1 tablespoon cornstarch

Instructions:
Medium skillet Alternatively, heat a wok over medium heat and add 1 tablespoon of olive oil. . Add the peppers and cook until softened, 1 to 2 minutes. Remove and place on a plate.
Increase the heat to high and add the flank steak, searing both sides and browning the beef. Then reduce the heat to medium and continue cooking until both sides are no longer pink or brown.
In a small bowl, combine garlic, brown sugar, soy sauce, sesame oil, ginger, and cornstarch.
Return the peppers to the pot and add the sauce. Simmer until sauce begins to thicken, 1 to 2 minutes. Serve over rice.
