Pizza Style Muffins
Instructions:
- Prepare the Oven: Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, salt, and Italian seasoning.
- Combine Wet Ingredients: In another bowl, whisk together the egg, milk, olive oil, and pizza sauce until smooth.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
- Add Pizza Toppings: Fold in the mozzarella cheese, pepperoni, green bell pepper, and black olives.
- Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle a little extra mozzarella or Parmesan cheese on top of each muffin if desired.
- Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden.
- Serve: Let cool slightly and enjoy warm, dipping in extra pizza sauce if you like.
These pizza muffins are great to enjoy fresh but can also be stored in the refrigerator for a few days and reheated.
