Ingredients:

1 cup all-purpose flour
1/2 cup vegan margarine, chilled and diced
1/4 cup powdered sugar
1 tablespoon cold water
1 cup dairy-free whipped cream

Preparation:

Preheat oven to 350°F (175°C).
Combine flour and powdered sugar in a mixing bowl. Add margarine until it resembles coarse crumbs. Gradually add the cold water and stir with a fork until the dough forms a ball.
Press the dough into the bottom and sides of a 9-inch tart pan with a removable bottom.
Bake the crust for 15-20 minutes or until lightly golden brown. Cool completely on a wire rack.
Once the dough has cooled, spread a thin layer of apricot jam on the base.
Whip the dairy-free cream until stiff peaks form. Spread on top of the jam layer.
Arrange various fresh fruits on the whipped cream layer.
Apply a thin layer of apricot jam to the fruit to give it a glossy finish.
Let rest in the refrigerator for at least 1 hour before serving.
