Potatoes with Creamy Garlic Sauce
Instructions
1. Roast the Potatoes:
- Preheat the oven to 400°F (200°C).
- Toss the potatoes with olive oil, salt, pepper, and thyme or rosemary (if using).
- Spread them in a single layer on a baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until golden and tender.
2. Make the Creamy Garlic Sauce:
- In a saucepan over medium heat, melt butter and sauté garlic until fragrant (about 1 minute).
- Lower the heat and stir in heavy cream, Parmesan cheese, and Dijon mustard (if using).
- Simmer gently for 3–4 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
3. Combine and Serve:
- Transfer the roasted potatoes to a serving dish. Pour the creamy garlic sauce over them.
- Toss gently to coat the potatoes evenly.
- Garnish with fresh parsley and serve warm.
