Instructions

1. Roast the Potatoes:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the potatoes with olive oil, salt, pepper, and thyme or rosemary (if using).
  3. Spread them in a single layer on a baking sheet.
  4. Roast for 25–30 minutes, stirring halfway through, until golden and tender.

2. Make the Creamy Garlic Sauce:

  1. In a saucepan over medium heat, melt butter and sauté garlic until fragrant (about 1 minute).
  2. Lower the heat and stir in heavy cream, Parmesan cheese, and Dijon mustard (if using).
  3. Simmer gently for 3–4 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

3. Combine and Serve:

  1. Transfer the roasted potatoes to a serving dish. Pour the creamy garlic sauce over them.
  2. Toss gently to coat the potatoes evenly.
  3. Garnish with fresh parsley and serve warm.
