Ingredients:

8 slices of pumpkin bread (about 1/2 inch thick)
4 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Butter or cooking Cooking spray
Maple syrup, whipped cream, and/or powdered sugar for serving (optional)

Instructions:

Preheat griddle or skillet: Preheat griddle or large skillet over medium heat.

Prepare egg mixture. In a shallow bowl or pie plate, whisk eggs, milk, vanilla extract, cinnamon, and nutmeg until well combined.

Soak the bread slices: Dip the pumpkin bread slices into the egg mixture for a few seconds on each side until well coated.

Prepare the French toast: Melt the butter on a preheated griddle or skillet or spray with cooking spray. Place the soaked bread slices on a griddle or skillet and cook for 2 to 3 minutes on each side or until golden brown and cooked through.
