Raspberry Pistachio Bliss Bars
Ingredients:
For the crust:
1 1/2 cups digestive biscuit crumbs
1/2 cup finely chopped toasted pistachios
1/3 cup unsalted butter, melted
For the raspberry layer:
2 cups fresh raspberries
1/2 cup white sugar
2 tablespoons cornstarch
For the cream cheese layer:
2 cups cream cheese, room temperature
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped cream, whipped
For garnish:
Whole fresh raspberries
Chopped pistachios Powdered sugar for flouring
Raspberry Pistachio Bliss Bars
Preparation:
Mix together biscuit crumbs, chopped pistachios, and melted butter. Line with baking paper and press into the bottom of a greased square baking dish. Chill for 20 minutes.
Combine raspberries, sugar, and cornstarch in a saucepan over medium heat. Cook until mixture thickens. Leave until completely cool.
Mix cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream.
Spread half of the cream cheese mixture over the base. Add a layer of cooled raspberry mixture. Repeat with remaining cream cheese and raspberry layers.
Store in the refrigerator for at least 4 hours or overnight. Before serving, garnish with fresh raspberries, chopped pistachios, and a pinch of powdered sugar.
