Ingredients:

boneless skinless chicken breasts
2 cups diced tomatoes
1 cup grated mozzarella
1/4 cup balsamic glaze
2 cloves minced garlic
2 tablespoons olive oil
1 tablespoon Italian seasoning
Salt and pepper
Fresh basil leaves for garnish

Preparation:

Preheat oven to 190°C (375°F). Lightly coat a baking dish with cooking spray.
Season the chicken breasts with salt, pepper, and Italian spices. Place in prepared baking dish.
In a mixing bowl, combine the diced tomatoes, minced garlic, and olive oil. Pour the tomato mixture over the chicken breasts.
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
Remove the baking dish from the oven and sprinkle the grated mozzarella over the chicken.
Return the dish to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted and bubbly.
Add balsamic sauce to the chicken just before serving.
Garnish with fresh basil leaves and serve hot.
