Spicy Cajun Salmon and Shrimp Delight
Ingredients:
- 2 salmon fillets (about 6 ounces each)
12 large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
2 tablespoons olive oil Olives
1 red bell pepper, sliced
1 bell pepper, sliced
1 onion, sliced
3 garlic cloves, minced
1 cup cherry tomatoes, reduced by half
1/4 cup chicken or vegetable stock
Salt and pepper to taste
Fresh parsley for garnish
Spicy Cajun Salmon and Shrimp Delight
Preparation:
Cajun -Sprinkle the seasoning evenly on both sides of the salmon fillets and shrimp.
Heat the olive oil in a large skillet over medium heat.
Add the salmon fillets to the skillet and fry for about 4 minutes on each side or until tender. Remove and set aside.
Add the shrimp to the same skillet and fry until pink and opaque, about 2 minutes on each side. Remove and set aside.
In the same skillet, sauté the peppers, onions, and garlic, adding oil as needed, until softened.
Add the cherry tomatoes and stock and simmer for about 5 minutes until the vegetables are soft.
Return the salmon and shrimp to the pot and reheat.
Season with salt and pepper, garnish with parsley and serve immediately.
