Salmon & Roasted Potatoes
Ingredients:
– 4 skin-on salmon fillets (approximately 170 grams each)
– 2 pounds baby potatoes (halved)
– 3 tablespoons olive oil
– 4 garlic cloves, minced
– 2 Tbsp. fresh rosemary, chopped
– 2 tbsp. tablespoons fresh thyme, chopped
– Salt and pepper, to taste
– 1 lemon, sliced for garnish
– Fresh parsley, chopped for garnish
Salmon & Roasted Potatoes
Directions:
1. Turn oven to 400°F (200°C) Preheat.
2. Add 2 tablespoons of olive oil, half the garlic, rosemary, thyme, salt, and pepper to the potatoes and mix. Spread on a baking sheet and roast for 20-25 minutes until golden brown and 3 cr. While the potatoes are baking, heat the remaining 1 tablespoon olive oil in a skillet over medium heat.
4. Season the salmon fillets with salt and pepper. Place them skin side down in the pan and cook for 5-6 minutes on each side or until the skin is crispy.
5. Serve the salmon with the fries, garnish with lemon slices and a pinch of fresh parsley.
