Ingredients:

1 pound large shrimp, peeled and deveined
3 cups broccoli florets
1 large bell pepper, diced (any color)
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
salt and pepper to taste
2 cups cooked rice or pasta (optional)
1/2 cup chicken or vegetable soup
1 cup grated cheddar cheese
1/2 cup breadcrumbs
2 tablespoons melted butter
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano

Directions

Preheat oven to 375°F (190°C).
In a large bowl, toss the shrimp with the olive oil, paprika, garlic powder, salt, and pepper. Marinate for 10 minutes.
Cook broccoli in boiling water for 2 minutes, then place in ice water to stop cooking. Drain well.
Place the cooked rice or pasta (if using) in the bottom of a large baking dish. Scatter the blanched broccoli and diced bell peppers on top.
Arrange the marinated shrimp on top of the vegetables.
Pour the soup over the shrimp and vegetables.
Sprinkle the grated cheese evenly over the contents of the baking dish.
In a small bowl, mix the breadcrumbs with the melted butter, thyme, and oregano. Sprinkle this breadcrumb mixture over the cheese layer.
Bake in the preheated oven for about 25-30 minutes, or until the shrimp are cooked through and the breadcrumbs are golden brown.
Let the casserole cool slightly before serving.
