Instructions

Prepare the Potatoes:
  1. Preheat oven to 375°F (190°C).
  2. Toss the thinly sliced potatoes with olive oil, salt, and pepper. Set aside.
Cook the Beef Layer:

  2. Add the onion and garlic, cooking until softened. Stir in smoked paprika, thyme, salt, pepper, and tomato paste. Cook for 2 minutes.
  3. Pour in the beef broth and simmer until slightly thickened (about 5 minutes). Remove from heat.
Make the Creamy Sauce:
  1. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes.
  2. Gradually add warm milk, whisking constantly until thickened. Remove from heat and stir in cheddar cheese, Parmesan, and garlic powder until smooth.
Assemble the Casserole:
  1. In a greased 9×13-inch baking dish, layer half of the potatoes, followed by the beef mixture. Pour half of the creamy sauce over the top.
  2. Repeat with the remaining potatoes, beef, and sauce. Sprinkle mozzarella cheese over the top.
Bake:
  1. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes, or until the top is golden and bubbly.
Serve:
  1. Let the casserole rest for 10 minutes before garnishing with parsley and serving warm.
