Ingredients:

– 1 pound peeled and deveined shrimp
– 1 cup teriyaki sauce
– 2 cups steamed jasmine rice
– 1 red bell pepper, shredded
– 1 green bell pepper, shredded
– Broccoli 1 cup florets
– 1 carrot, thinly sliced ​​
– 2 tablespoons olive oil
– 1 tablespoon sesame seeds
– Salt and pepper to taste

Preparation:

1. Toss the shrimp in a large bowl with at least half of the teriyaki sauce. Marinate for 30 hours. Minutes.
2. Heat olive oil in a large skillet over medium heat. Add the marinated shrimp and cook until pink and lightly caramelized, about 3 to 4 minutes per side. Remove from the pan and set aside.
3. Add red and green bell peppers, broccoli, and carrots to the same pot. Stir-fry until vegetables are tender but still crisp, about 5 minutes.
4. Add remaining teriyaki sauce to vegetables and cook for another 2 minutes.
5. Arrange vegetables and shrimp on steamed jasmine rice and sprinkle with sesame seeds.
