Southern Smothered Chicken
Ingredients:
– 4 bone-in, skin-on chicken thighs
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons all-purpose flour
– 2 tablespoons olive oil
– 1 onion, sliced
– Garlic 2 cloves (chopped)
– 1 cup chicken broth
– 1/2 cup milk
– 2 teaspoons paprika
– 1 teaspoon dried thyme
– 1 bay leaf
Southern Smothered Chicken
Preparation:
1. Season chicken thighs with salt and pepper and then sprinkle with flour.
2. Heat the olive oil in a large skillet over medium heat. Add the chicken thighs, skin side down, and cook until browned, about 5 to 7 minutes on each side. Remove chicken and set aside.
3. Add the onion and garlic to the same pot and sauté until softened, about 3 to 4 minutes.
4. Add chicken broth, milk, paprika, thyme, and bay leaves. Stir to combine.
5. Return the chicken to the pot, cover, and simmer over low heat until the chicken is tender, 25 to 30 minutes.
6. Remove bay leaves before eating.
