  • Salt and pepper, to taste
  • 2 cups shredded Monterey Jack cheese (or a mix of Monterey Jack and cheddar)
  • 8-10 corn or flour tortillas
For the Sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups vegetable broth
  • 1/2 cup sour cream
  • 1 (4 oz) can diced green chilies
  • Salt and pepper, to taste
For Topping:
  • Extra shredded cheese (optional)
  • Fresh cilantro, chopped (optional)
