Spinach Garlic Meatballs Stuffed with Mozzarella

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Meatball Mixture:
    • In a large mixing bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, pepper, and Italian seasoning.
    • Mix until all ingredients are well incorporated but don’t overmix, as it can make the meatballs dense.
  3. Shape the Meatballs:
    • Take about 2 tablespoons of the meat mixture and flatten it in your palm.
    • Place a cube of mozzarella in the center, then fold the meat around it, rolling it into a ball to seal the cheese inside.
    • Repeat with the remaining meat mixture and mozzarella cubes.
    • In an oven-safe skillet, heat the olive oil over medium heat.
    • Add the meatballs to the skillet and sear each side until they’re browned (about 1-2 minutes per side).
    • Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the meatballs are cooked through and the cheese is melted inside.Cook the Meatballs:
      • In an oven-safe skillet, heat the olive oil over medium heat.
      • Add the meatballs to the skillet and sear each side until they’re browned (about 1-2 minutes per side).
      • Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the meatballs are cooked through and the cheese is melted inside.

       

  4. Serve:
    • Serve hot with marinara sauce or your favorite pasta. These also work well as an appetizer on their own!

Tips:

  • For extra flavor, add chopped fresh basil or parsley to the meatball mixture.
  • Be careful not to overstuff with mozzarella, as it might leak out while baking.
