Spinach Stuffed Chicken Breasts
Ingredients:
boneless skinless chicken breast fillets
Salt and pepper to taste
1 tablespoon olive oil
2 cups fresh spinach, chopped
1/2 cup cream cheese, softened
1/4 grated Parmesan cheese cups
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 cup shredded mozzarella
Spinach Stuffed Chicken Breasts
Directions:
Preheat oven to 375°F (190°C).
Make a deep cut along the side of the chicken breast to create a pocket. Be careful not to cut it completely.
Season the inside and outside of the chicken breast with salt and pepper.
Heat the olive oil in a frying pan over medium heat and fry the spinach until it wilts. Add garlic and fry for another minute. Removed from heat.
In a bowl, mix sautéed spinach and garlic with cream cheese, Parmesan cheese, and Italian seasoning until well combined.
Stuff each pocket of chicken breast with spinach and cheese mixture and secure with toothpicks.
Place the stuffed chicken breasts in a baking dish and sprinkle with grated mozzarella cheese on top.
Bake for 25-30 minutes or until chicken is cooked through and cheese is golden brown and bubbly.
Serve warm with additional fresh spinach or herbs if desired
