Instructions

1. Roast the Vegetables

  1. Preheat your oven to 425°F (220°C).
  2. Toss carrots and Brussels sprouts with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread them in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly caramelized.

2. Cook the Steak Bites

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season steak bites with salt and pepper. Sear them in the skillet for 2-3 minutes per side until browned and cooked to your liking. Remove from the skillet and set aside.
  3. Lower the heat to medium, melt the butter, and add minced garlic. Sauté for 30 seconds until fragrant.
  4. Stir in the Italian herbs, then return the steak bites to the skillet, tossing to coat in the garlic herb butter.

3. Assemble and Serve

  • Serve the steak bites alongside the roasted vegetables, garnished with fresh parsley.
