Steak & Shrimp Loaded Baked Potato
Ingredients:
- 4 jumbo baked potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 pound steak, cut into bite-sized pieces
- 1 pound shrimp, peeled and deveined
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 cup sour cream
- 1/4 cup chopped chives
- 1 cup grated cheddar cheese
- 2 tablespoons butter

Directions:
- Preheat oven to 450°. Preheat to F. Preheat to (232°F). ℃). Wash and drain the potatoes, then pierce them all over with a fork. Rub each potato with olive oil and season with salt and pepper. Place on a baking sheet and bake for about 1 hour and 15 minutes, or until tender
- Prepare the steak and shrimp. Season steak pieces with salt, pepper, garlic powder, and chili powder. Heat a little oil in a cast iron skillet over medium heat. Grill the steak pieces for about 1 minute on each side or until browned. Remove and set aside. In the same skillet, cook shrimp until pink and opaque, about 2 minutes per side.
- Assemble the pile of potatoes. Cut off the top of the baked potato and scoop out some of the inside to make a well. Season the hollowed out potatoes with butter, salt, and pepper. Add mixture back to each potato and top with steak, shrimp, sour cream, chives, and cheddar cheese.
- Bake until cheese is melted and bubbly, about 2 to 3 minutes.
