Strawberry Cinnamon Rolls

 

 

Ingredients:

For the dough:

2 3/4 cups all-purpose flour
1/4 cup granulated sugar
1 teaspoon salt
2 1/4 teaspoons instant yeast
1/2 cup milk
1/4 cup unsalted butter, melted
1/4 cup warm water
1 teaspoon vanilla extract
2 large eggs

For the filling:

1 cup diced fresh strawberries
1/4 cup granulated sugar
1 teaspoon ground cinnamon

For the cream cheese frosting :

4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract

Directions:

In a large bowl, combine flour, sugar, salt, and instant Add yeast and mix.
Heat the milk in another microwave-safe bowl until warm, about 30 seconds. Add melted butter, warm water, vanilla extract, and eggs to milk and stir until well combined.
Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
Transfer the dough to a lightly floured work surface and knead until smooth and elastic, about 5 minutes.
Place the dough in an oiled bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour or until doubled in size.
While the dough is rising, prepare the filling. In a small bowl, mix together the diced strawberries, sugar, and cinnamon.
When the dough has doubled in volume, punch it out and roll it out on a floured surface into a large rectangle.
Spread the strawberry filling evenly over the rolled out dough.
Starting from the long side, roll the dough tightly into a roll.
Using a sharp knife, cut the trunk into approximately 12 equal pieces.
Place the cinnamon rolls in a greased baking dish, cover with a kitchen towel, and let rise for another 30 minutes.
Preheat oven to 375°F (190°C).
Bake the cinnamon rolls for 20-25 minutes or until golden brown.
While the cinnamon rolls are baking, prepare the cream cheese icing. Combine soft cream cheese and butter in a bowl and mix until creamy. Gradually add the powdered sugar and vanilla extract and continue mixing until smooth.
Remove the cinnamon rolls from the oven and let them cool for a few minutes.
Drizzle cream cheese glaze over warm cinnamon rolls.
Strawberry Cinnamon Rolls are best served warm.
