Stuffed Chicken Breast with Spinach

Ingredients:

– 4 boneless, skinless chicken breasts
– 1 cup fresh spinach, chopped
– 4 ounces cream cheese, softened
– 1/4 cup grated Parmesan
– 1 teaspoon garlic powder
– Salt and pepper to taste
– 1 tablespoon olive oil
– 1/2 cup breadcrumbs
– 1/4 cup Parmesan cheese for coating
– 2 beaten eggs

Stuffed Chicken Breast with Spinach

Directions:

1. Preheat oven to 375°F (190°C) Preheat to (°C).
2. In a bowl, mix together spinach, cream cheese, 1/4 cup Parmesan, garlic powder, salt, and pepper.
3. Cut a pocket in the side of each chicken breast. Stuff each breast with spinach and cream cheese mixture.
4. Dip the stuffed brisket in the beaten egg and brush with the breadcrumb and 1/4 cup Parmesan cheese mixture.
5. Heat the olive oil in a frying pan over medium heat and fry the chicken breasts for 3 to 4 minutes on each side until golden brown.
6. Place the chicken breasts in a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
