Italian Sausage Stuffed Sweet Italian Frying Peppers
Instructions:
- Prepare the Peppers:
- Wash the peppers and carefully slice off the tops, keeping them intact for later if you want a “lid” presentation.
- Use a small knife or spoon to remove the seeds and membranes. Set the peppers aside.
- Make the Filling:
- In a large bowl, combine the sausage, breadcrumbs, Parmesan cheese, ricotta (if using), egg, garlic, parsley, oregano, salt, and pepper. Mix until well combined.
- Stuff the Peppers:
- Using a small spoon or piping bag, fill each pepper with the sausage mixture. Pack the filling gently but don’t overstuff to avoid splitting.
- Sear the Peppers:
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add the stuffed peppers and cook for 2–3 minutes per side until lightly browned. Remove from heat.
- Add Sauce and Bake:
- Pour marinara sauce around the peppers in the skillet, ensuring the bottom is coated.
- Cover the skillet with foil and bake in a preheated oven at 375°F (190°C) for 25–30 minutes, or until the peppers are tender and the filling is cooked through.
- Top with Cheese:
- Remove the foil and sprinkle mozzarella cheese over the peppers.
- Return to the oven and bake for another 5–10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with additional parsley and serve hot with crusty bread or over a bed of pasta.
Tips for Success:
- Choose the right peppers: Sweet Italian frying peppers are ideal, but you can substitute with bell peppers or poblano peppers for a twist.
- Adjust the filling: Add diced onion, spinach, or crushed red pepper flakes to the sausage mixture for extra flavor.
- Use the stovetop only: If you don’t want to bake, cook the peppers on the stovetop, covered, on low heat until tender.
